A few weeks ago I decided to quit putting myself second all the time, especially in the kitchen. I have been trying some new recipes and let me tell you, I feel great. Why can't a gal eat good food, even when she's just cooking for one? It actually has its perks like cooking once and having leftovers for a few more lunches or suppers. I don't mind eating the same thing on repeat, especially when it's as delicious as these dijon lentils over grilled asparagus from Tami Hardeman's new book, Pulse Revolution.
I washed and cooked my lentils beforehand to help supper come together a little faster. I made up the dressing and tossed the cooked lentils in to have ready in the fridge. The lentils alone are amazing. They are tangy and tart from the mustard and vinegar. This combination pairs well with the creamy yolk of the soft poached egg and the grilled asparagus. And that egg yolk makes a sort-of velvety sauce that coats everything. So heavenly!
The recipe called for oven-roasted asparagus but I am in full-on barbecue mode, so I grilled mine instead. Check out my new Cedar Scraper I picked up on Amazon last summer. After reading some of those stories in the media about ingested wire bristles from the old-school barbecue brushes, I figured better safe than sorry and made the switch. And I'm guessing they're better for the environment, too!
